🍎Apple Chiboust Cake [FOOD VIDEO] [스윗더미 . Sweet The MI] - Duration: 19:45.
Hi this is Sweet The Mi.
Today I'm back with a very unusual cake recipe.
I'll be using the Chiboust cream to make Chiboust cake.
It's very delicate recipe but it's a great cake has great sweetness as a pudding.
First let's make pie sheet.
Add the cold butter and salt into the flour and squeeze the butter with your hands.
Add the cold water and knead the butter mixture until it comes together.
Cover the dough with a plastic wrap and refrigerate for about 2~3 hours.
Take the dough out of fridge and roll the dough as thin as possible.
Place the dough into a oven pan and trim the side.
Cut and shape the dough and stick the dough on the round mold side.
Prick the dough using a fork then place a heavy stone on the dough
and bake at 180℃ (360℉) for 20 minutes.
Move the stone out brush the egg and bake for another 10 minutes.
Peel, halve, and core the apples.
Add the butter with apple in the pan and cook.
When the apple is soft add the sugar and continue cooking.
When the apple is ready Set aside to cool completely
Combine together eggs, sugar and heavy cream in the mixing bowl.
Toss the apple lightly in cream mixture pour the mixture into the baked pie.
Bake at 180℃ (360℉) for 20 minutes.
Set aside the tarte to cool completely.
Time to make Chiboust Cream.
First we need to make custard cream.
Mix the sugar and flour in egg yolk.
When the milk just begins to boil remove from heat and pour into yolk mixture.
Pour back into a pan and boil with a low heat until the mixture is thick.
When the mixture is thick enough add the water soaked gelatin and mix.
Cover the mixture with a plastic wrap and cool completely
Time to make Italian meringue and mix with our custard cream.
Add the sugar with water in a pan and boil until it reaches up to 115℃(240℉)
While mixture is boiling Whip the egg whites Pour the sugar mixture into meringue and whip.
Pour the meringue mixture into custard cream and mix Our Chiboust Cream is done.
Place the pie in round mold and pour the Chiboust Cream on top.
Flat the top and Set the cake in the freezer for about 5~6 hours.
When the cake is ready remove the round mold.
spread the sugar evenly on the top of the cake and heat with a blowtorch until the sugar caramelizes evenly.
Repeat this process for 2~3 times to make sure the sugar caramelizes evenly.
Apple Chiboust Cream Cake is Done!
You will taste the sweetness from the apple pudding on top,
and great soft Chiboust Cream in the middle.
and that caramelized sugar with crunchy pie!
I've never tasted something like this before it was do good!
It's a cake that taste like a great pudding.
This recipe is so delicate and hard to make but it was all worth it.
