Wash 500 grams of Apricots or Qubani throughly
Soak in 1.25 liters of drinking water overnight
Use the same water for making the dessert
Remove the seeds and keep aside
Do not discard the water
Add the de-seeded apricots along with the water to a sauce pan
Cook for 10 minutes
Add 600 grams of sugar
Stir at times
Cook for 20 minutes till it attains a thick consistency
Allow this to cool
Break the apricot seeds and collect the fruit
Add 1 cup water to these apricot seed fruits and boil
Peel the skin of boiled apricot seed fruits and keep aside
Once cooled, add 1/4th teaspoon vanilla essence to the apricots
Add 1/2 teaspoon raspberry colour
Add peeled apricot seed fruits
Mix thoroughly
Apricot dessert/Qubani ka meetha is ready. Garnish with milk cream and serve.
