Mutton Curry With Punjabi Tadka [ENG SUBS] - Duration: 7:23.

Hello Everyone I, Gurpreet Kaur welcome you on my show Cook With Kaur.

Today we're going to talk about Punjabi Virsa (Culture)

Every state and culture is represented by its traditional food and clothes,

But the love for Punjabi Culture is disappearing as we're going ahead on the road of developement.

Mixers and grinders have taken over the role of Kundi Danda ( mortar and pestle)

Chulha (traditional earthen stove) is replaced by inductions and gas cylinders

Italian kitchens are our preference over Chaunka (traditional Punjabi Kitchen)

Our show Cook With Kaur has made an effort to show our viewers a glimpse of Punjabi culture through a traditional Punjabi Kitchen.

In earlier times, the women of the house used to work together in the same chaunka(traditional Punjabi kitchen)

Today we all friends are also going to work on the same chaunka.

The main dish for today is Mutton Curry with Punjabi Tadka which will be made in a taudi(earthen pot)

Firstly, we will add desi ghee in taudi(earthen pot) because

Desi ghee is the pride of Punjab.

Non Veg Mutton Curry is incomplete without desi ghee that's why first we will add ghee to the pot.

We will add Khade Masale(Indian spices) which include

Friend: Take this carefully

Black Cardamom

Black Pepper

Cumin seeds

Bay leaves

Cloves

and Cinnamon Stick

We will keep the spices in the pot for 5-6 seconds and then

and will add the onions grounded in kundi danda(mortar and pestle).

Now we will cook the onions till brown.

We will serve Missi Roti (Indian Bread) with mutton curry

Our tandoor (Punjabi stove) is getting heated and our dough for missi roti is also almost ready

While our mutton is being cooked, in the mean time we will also prepare missi roti

[ALL ARE TALKING ABOUT THE FRAGRANCE AND AROMA OF THE MUTTON BEING COOKED ON THE CHULHA]

We have to keep stirring the mutton so that it doesn't stick to the bottom

because the heat of the chulha cannot be controlled like the Modern stoves.

And burnt woods and cow dung will leave the aroma in the mutton curry.

It will take 10-15 minutes for the onions to get brown

Friend: the dough is ready for the missi roti

Friend: We should make missi roti as the dough is ready

Tandoor is also ready

And masala of mutton curry is also almost ready

Only the salt and other spices are left to be added and then we will start cooking roti.

We will add salt in the masala

Turmeric powder

This is a Punjabi style curry so no extra spices are to be added

Only the spices which we use daily in our cooking like salt, turmeric powder,etc,.

And finally Kashmiri Red Chilli Powder

Now we will cook the masala so that it gets the required color

[DISCUSSING ABOUT THE COLOR OF THE MUTTON MASALA]

Now we will add ground tomatoes and green chillies

We can also add water with the tomatoes as the onions are cooked

Mix onions and tomatoes till the ghee floats on the surface of the curry and then we will add mutton to it.

Masala is ready and so we will add mutton to it.

We will add water in the mutton curry

Mix it well and cover it with the lid as mutton takes a lot of time to cook on the low flame

In the meantime we can finish making missi roti on tandoor

Our missi roti are ready to eat

I think the mutton is also ready.

Mutton is finally ready to serve

For the final touch we will add coriander to the curry

Let's serve the mutton with missi roti

Mutton with Punjabi tadka and missi roti is ready to eat
