50'S ON THE CAPE, 50'S ALONG THE

IMMEDIATE SURE, 60'S OVER THE

INTERIOR.

WITH THAT WIND OFF THE WATER, I

EXPECTED TO DROP TO THE LOW 50'S

FOR THE START OF THE GAME AT

FENWAY TONIGHT.

YOU WILL WANT A JACKET AND

CERTAINLY A WARM SWEATSHIRT THAT

WILL KEEP YOU WARM DURING THE

Fondant Potatoes - Crusty Potatoes Roasted with Butter and Stock - Duration: 4:14.

fondant potatoes so we'll need three

russet potatoes a tablespoon of butter

some fresh thyme salt and pepper to

taste let's make some fondant potatoes

for our dish fondant means cook with

stock

now these restaurant style potatoes are

packed with flavor and a nice color cut

the skin off all the way around cut the

ends off and then we can start our

trimming we want to use a hearty potato

like a russet so it doesn't break down

so your four corners then you do each of

those corners

and then we'll cut this one in half

because we want them about two inches

one two then put in some water to soak

for about five minutes this removes the

outer starch in an oven safe frying pan

bring it up to temperature about 200

degrees Celsius or 375 Fahrenheit and

add some grapeseed oil to the pan about

a tablespoon add your potatoes to the

hot oil and let caramelize for about

four minutes

this will be our presentation side so

these are nice and crispy on the bottom

as you can see that's our presentation

side we want to flip them over take them

to the top of the pan main reason it's

going to be that we're going to drain

most of this oil off actually sop it up

there we have them all flipped up now we

want to tilt the pan to get the oil down

we're sop the oil up with a the paper

towel

carefully as possible that goes into the your bin

add your butter a couple of sprigs of

thyme let the butter melt Oh does that ever smell good

reduce your heat so now you just want

enough chicken stock basically coat the

bottom place the potatoes in the oven

for at least 30 minutes when the

potatoes are finished you should have

buttery soft potatoes remove from the

oven and plate remember very hot

low and fast high-end taste with some

decadent fondant potatoes I made this

dish and testing last weekend and

needless to say there were no complaints

about making it again if you like this
